In September 2021, the third edition of Rare Bird gin was launched. The process began with crafting a slightly spicy gin, incorporating star anise and allspice into their London Dry gin’s botanical mix. After distillation, they added Madagascan Bourbon vanilla pods, cloves, ginger root, and more star anise and allspice to macerate in the gin for five days. This infusion created a rich, deep, soft spice flavour and a stunning burnt amber colour.

On the nose, one can detect notes of charred orange peel, a hint of cracked black pepper, and sweet cinnamon rolls. These aromas translate onto the palate, delivering a burst of warming spice and a lovely sweetness from the vanilla.
