We are rounding off the weekend with a fresh and z We are rounding off the weekend with a fresh and zingy Grapefruit &  Basil Gin Smash made with Big 7 gin, a creation from Charles & Mike Distilling Ltd.
They founded the concept in March 2020 with one simple goal: to make the best spirits they possibly could. Having worked in the industry for a long time fortunate enough to spend time in distilleries across the UK and Europe and came to understand the art and process of distilling.
After some time distilling for personal consumption they started creating spirits we knew we had to share which was when Charles & Mike Distilling Ltd was born. All of their spirits are small batch creations made at their aDistillery in the heart of Essex. All of their products are hand crafted in a traditional copper still.
Their London Dry Gin is where their gin journey began. Initially they tried countless variations of botanicals until the perfect blend was found.
Big Seven London Dry is a complex, smooth Gin that has layers of flavour an a lasting complex finish.
The name ‘Big Seven’ is because there are  7 botanicals! Juniper, Lemongrass, Angelica Root, Cassia Bark, Chamomile, Grapefruit Peel & Bay Leaf all feature giving way to a blend that is a beautiful combination of classic, aromatic with a fresh edge.
Whilst juniper forward this gin has a bright and refreshing citrus undertone. Zingy notes of grapefruit are combined with lemongrass, a delight for the senses. Heady aromatics give balance to these citrusy notes.
Upon checking out the website we decided to opt for one their specially curated cocktails - which we can certify - are divine!!Ingredients:
60ml Big Seven Gin
25ml Lemon Juice
15ml Grapefruit Juice
6-8 Basil Leaves, TumblerMethod
1. Tear the Basil Leaves and slap then in your hands to release the oils before dropping them into a shaker.
2. Add remaining ingredients (except Grapefruit Juice) and muddle the Basil.
3. Add ice and shake for 15 seconds.
4. Double Strain into an ice filled Tumbler and pour in the Grapefruit Juice.
5. Garnish with lemon peel and basil leaves.

It’s Saturday night and we are in the mood to dr It’s Saturday night and we are in the mood to drink pink!
Quintessentially British, @horseguardslondondrygin takes inspiration from Britain’s Horse Guards formed by King Charles II back in 1661, as well as iconic characters from the regiment over the years.
The range features signature Horse Guards London Dry, which includes botanicals such as Juniper, Coriander, Cardomon, Angelica, Orange & Grapefruit Peel, and really celebrates craft and tradition, and also Horse Guards Pink (pictured) which has just recently launched and infuses the original recipe with Raspberries & Cranberries.
With so many berry gins on the market it can be difficult to make an impact, but the cranberry pairing really is a stroke of genius in this instance. The cranberry adds interest to the raspberry, with both berries contrasting beautifully with each other but also against the flavourful London Dry base. Juniper is certainly at the core, citrus amplifies the flavours and helps smooth the finish, whilst the raspberry & cranberry seduce across all senses (it smells divine) and lingers long after.
This evening we paired with Fever-Tree Rose Lemonade, the delicate flavours in the lemonade works beautifully well with the Raspberry & Cranberry. Founded by Sally Faulkner, she acquired the old Bond Street Glass premises in Hinckley Leicestershire. This old Victorian building was originally part of the Brocklehurst Hosiery Company built in the early 1900’s.
Drawing inspiration from their Victorian surroundings the team at Bond Street distillery not produce a fine selection of gins.
Crafted in ‘Claire’, their beautiful copper still this is a London Dry Gin with that is packed full of flavour.
Deliciously citrus forward with rich, zesty flavours of citrus, there is  also wonderful aroma of English coriander. Juniper notes stand proud and bold making this, in our opinion, a standout creation.
We paired with Fever-Tree Indian Tonic Water and a slice of red grapefruit.

Penrhos Apple and Elderflower is created by Penrho Penrhos Apple and Elderflower is created by Penrhos Spirits, located on Penrhos Farm on the Herefordshire Marches.The gin is bottled at 40.5% ABV and is a delicious mix of the delicate notes of hedgerow elderflower and the crisp fruity edge of apples from their orchard, blended with their Signature London Dry base which includes blueberries, cherry blossom and honeyTo describe, elderflower makes itself known on the palate, followed by the sweetness of the apple and the tartness of its skin. There’s a lovely peppery finish to the gin and complexity that shines through from its base, but it never overpowers or takes away from the delicate and wonderful flavours of the gins namesake.As a serve all you need is a light or elderflower tonic and a garnish of apple and you’ve got yourself a mighty fine G&T. Light, refreshing but with an edge to it.Like a cocktail? How about a French 75:* 1 tbsp lemon juice
* 1 tsp sugar syrup
* 50ml Penrhos Apple & Elderflower Gin
* Champagne
* Ice & Lemon zest to garnishPour the lemon juice, sugar syrup and gin into a cocktail shaker then fill up with ice. Shake well then strain into a champagne flute. Top with a little champagne, leave to settle (as it will bubble up) then fill up with more champagne. Burleigh’s Gin have teamed up with the Marilyn M Burleigh’s Gin have teamed up with the Marilyn Monroe Estate to bring you Marilyn Monroe Gin.
Both the bottle and the gin inside are a pale pink, as it’s distilled with an array of pink botanicals including cherry blossom, hibiscus, rose and pink grapefruit.
On the nose this is zesty and full of glorious grapefruit with a beautiful floral bouquet running underneath. To taste, it’s much drier than you might expect which only delights us further, with pink grapefruit providing balance to the sweetness of hibiscus and cherry blossom. Soft and utterly delicious it has a lovely floral finish with a touch of bitterness and spice.
Perfect serve? Garnish with strawberries and a sprig of mint for the perfect finish

Ralph Dodd was somewhat ahead of his time in that he courted investment and was actually offered share options - a concept that was actually illegal in those early days. Due to this the company was broken up and at that point the Dodd’s gin dream was no more.
Fast forward 200 years and the talented team that create Dodd’s gin have revived the distillery, initially launched in 2011 and played a significant role in the resurgence of the gin that we all enjoy today.
This innovative brand have since launched a variety of gins but have still kept true to their ethos and vision of what ‘Dodds Gin’ should be.
Tonight we focus on ‘The Explorers Citrus Spice edition’ It  is everything you would want it to be and more....distilled with rare peppercorns from the Far East along with cardamom, coriander, fresh lemons, cubeb, moudulkiri red, Vietnamese lond red and rare wild first peppers all hand picked from the Chu Lai region of Vietnam.  Let’s also not forget the signature addition of honey that gives a delicate sweetness to their entire range.
The freshness of this  gin is beautifully flavoured with the subtle honey sweetness from the honey from their very own hives. This is a gin that takes you on a flavour journey that should you enjoy citrus or spice more you can tailor either way...
It really is a true journey of gin discovery that as you sip unravels layers of flavour.  The familiar gin backbone is still at the core of this delicious spirit.
We paired Dodd’s Citrus and Spice two different ways to showcase the versatility and of course to demonstrate how you can enjoy depending on your own palate and preference.
The Orange garnish enhances the beautiful citrus notes and allows for a long aromatic finish.
With a garnish of Rec Chilli it is bold at the fore but gives me way to a very long and aromatic finish.

You know the saying? Something Old, Something New, You know the saying? Something Old, Something New, Something Borrowed, Something Blue....
This stunning creation was inspired by the nuptials of McLean’s Gin founders, Colin & Jessica when they wed in June 2018.
As well as a nod to the traditional verse, Something Blue focuses not only on Colin and Jessica’s marriage BUT also the marriage of their two favourite botanicals, tonka bean and the buchu leaf. There are a further 6 botanicals which are kept as a secret although they do include the clitoria ternatea which gives the beautiful blue hue.
Founded in 2017 from the cupboard of their Glasgow tenement flat and now based on the outskirts of the charming market town of Strathaven, South Lanarkshire, McLean’s Gin produce a quirky and colourful collection of craft spirits from their purpose-built “Gin Lab”. Every aspect of production is carried out by the careful hand of Head Ginologist; Colin McLean. Hand-crafted in batches of no more than 50L, McLean’s Something Blue was initially created as a Limited Edition but has since become their flagship product. Floral notes of violet and lavender open the spirit, with hints of fresh herbs, almond, blackcurrant and a touch of marzipan.
Something Blue is a really fascinating blend as it somehow walks the line between dry and sweet, containing elements of both, but without ever really becoming either. Distinctly floral, complex, with a signature creamy mouthfeel, it’s a delight to drink with twists and turns aplenty.
As a serve we paired with a Fever-Tree Mediterranean Tonic and a garnish of cucumber and mint.

The story begins in the city of Rezekne, Latvia where the founding brothers Great-Great-Grandparents began distilling vodka from grain. As young boys, the brothers Vitalijs and Alex, enjoyed watching their grandparents whilst learning the secret family recipes passed down from generations.
In 1998 Vitalijs and Alex moved to Stoke-on-Trent. Proud to have grown up in the heart of the country the brothers were inspired by the city and its rich cultural heritage. Made up of six neighbouring towns and renowned as the World Capital of Ceramics, it’s considered one of the few cities worldwide to still be a world leader in their craft today. This inspiration comes through clearly in the final product...
The gin itself is full of juniper, cardamom and zesty lemon with warming ginger and pink peppercorns developing towards the finish. The complete list of botanicals will never go further than their trusted team, it’s a secret family recipe after all, but it’s fair to say that this has all the hallmarks of a solid juniper forward gin. No gimmicks, just a great balance of flavours, with juniper, herbs, citrus and spice enriching the journey. And as for the bottle, you'll struggle to find anything with the same unique craftsmanship.

A fusion of Dutch and English traditions, this juniper forward gin combines London Dry rules with heavier juniper notes from Dutch Genevers. There are 7 botanicals in total, including juniper, Persian limes, grains of paradise, coriander, angelica, cardamom and calamus, resulting in a complex yet easy drinking gin with real presence.
Juniper is key, paying homage to traditionalism, but remains innovative in its method and balanced by its botanical counterparts. Persian Limes are equally as important, helping create a beautiful drinking experience full of light and shade. Coriander, angelica and cardamom add depth and warmth, whilst grains of paradise and calamus add spice. Each plays its part, adding layers of interest. Bottled at 48% ABV it’s no wallflower yet remains smooth and easy to drink. It’s also robust enough to shine when paired with tonic (even a flavoured tonic) or used within a cocktail.
We couldn’t end without crediting the bottle design, which looks like a beautiful stain glass window. The colours are captivating, and on looks alone we were desperate to try this. Thankfully it didn’t let us down, pleasing our senses from the moment we picked up the bottle to our last sip.

Look no further then this delicious creation using our Yuzu & Szechuan Pepper Gin.  Our signature creation, the Yuzu, an oriental citrus fruit (a hybrid combination of a lemon, lime and grapefruit) and Szechuan Pepper mirror the friendship that made The Gin To My Tonic possible. Both sides bring something entirely unique to the table, whilst working together with ease.
Botanicals include juniper, coriander, orris, liquorice, lemon, lemon peel, orange peel, lime peel, yuzu peel & Schezuan pepper.
On the nose juniper, tantalising citrus and seductive spice come through giving you hints of what’s to come. To taste waves of citrus rush to greet you, the yuzu is powerful, with the orange, lemon and lime adding depth. Piney juniper makes itself known, along with subtle herbs providing balance. To finish it’s a dry tingling finish (if you’ve met us at a festival you will know we talk about the infamous tingle) that continues to develop the more you drink. The pepper isn’t fiery rather it gives the gin a defined and dry finish.Now of course our Yuzu & Szechuan lends itself perfectly to a Red Snapper, and we have the perfect recipe for you to try at home!
Also just in case you were wondering the inspiration for the addition of olives and brine came from our recent collaboration with Olives from Spain. We have to say with added olive brine this Red Snapper works oh so well!Ingredients:60ml of Yuzu & Szechuan Pepper Gin
6 dashes of The Ibiza Chilli Co Hot Sauce, fruit and fire
3 dashes of Worcestershire sauce
Juice of half a lemon
Salt and Pepper
5ml of Hojiblanca olive brine
Garnish: Hojiblanca olivesMethod:Fill a highball glass with ice and set aside. Add all ingredients into a cocktail mixer that has been filled with ice. Shake vigorously and the strain into the glass. It’s been a crazy four years, particularly the last 9 months, but we would not change our journey for a second.
Four years ago today we launched The Gin To My Tonic as a simple Instagram blog and an escape from reality. Today, we’ve toured and won awards for our events, collaborated and supported distilleries, continued to push the boundaries on what we’ve been told we could achieve, and fallen more in love with an industry which has become a 2nd family.
Who knows what 2021 holds, but
at the heart of The Gin To My Tonic is a best friendship, and a love and respect for distilling and craftsmanship that will never change.
To everyone who has joined us on this journey, a deep felt thank you. You are the beating heart of The Gin To My Tonic and make these gin adventures possible. This is only the beginning 😘
