Tasting Notes: Vanilla, Raisins, Stone Fruits

Perfect Pour: The complexity of Oaked Gin stems from the vanilla flavour that occurs naturally when using oak barrels during distillation, as well as the botanicals selected to emphasise the flavours of warming spices. With this in mind, we find that garnishing an Oaked Gin and tonic with orange and juniper berries enhances the gin’s warmth and floral character.

Distiller Simon says: “The vanilla flavour in Oaked Gin actually comes from the vanillin that is found in oak sawdust, which is something I discovered by accident during my time as a brewer. While making a beer using oak chips I used a steamer to properly sterilise the pieces of oak going into the brew. After steaming, a liquid was left behind that smelled wonderful and tasted like vanilla! Distilling with oak whisky casks is similar to placing them in a large steamer, thus we achieved that same vanilla flavour for the Oaked Gin. Between the vanilla and its warming spice flavours, Oaked Gin works as a great whisky equivalent in a hot toddy.”
