This gin has high notes of conifer buds, aging with cork and toasted to different temperatures to highlight different elements of this vitally important tree, brings out hints of smoke, vanilla, sun warmed wood and gorse like coconut. With floral peony elements and olive oil bringing herbaceous undertones, this gin is very well balanced.
What gives this gin its rounded taste is the time it spends in old fortified portuguese wine casks of the finest vintages. Macerating corks toasted to different levels reveals a whole spectrum of inherent flavours.
