We are stepping into Spring with a revisit to a gi We are stepping into Spring with a revisit to a gin that has always been a go to for us!
Sea Glass Gin is created by @deerness_distillery and have been a part of The Gin To My Tonic journey from the start.
With a botanical blend that is far reaching from juniper, tarragon, lemon verbena, lavender to orange peel, cucumber and mint it is bursting full of flavour.
Juniper is at the fore accompanied by floral lavender notes, fresh herbs and zesty citrus courtesy of the lemon verbena and orange. Cucumber and mint provide the finish.
It’s a refreshing and unique combination of botanicals, which we have garnished with their recommended serve, Kiwi & Blueberries, then perfectly paired with  Fever-Tree Elderflower Tonic. It’s the epitome of freshness and flavour, with the tonic really working alongside with the existing flavours.
Deerness Distillery has continued to go from strength to strength having won the Great British Food Award for Classic Gin, as voted by Raymond Blanc to expanding their range to include a Vodka and Pink Gin.
There must be something in the Orkney waters as we have yet to try a gin in the region we haven’t enjoyed, and Sea Glass stands proudly among them!

We are ending the weekend with an Audemus Spirits We are ending the weekend with an Audemus Spirits  Pink Pepper cocktail, made with fresh strawberries....Born from a desire to create an aromatically bold and complex new-style gin, Pink Pepper is @audemus_spirits flagship product and is distilled in the heart of Cognac in France. 
Pink Pepper is made with nine botanicals including juniper, pink peppercorns, cardamom, honey, vanilla and tonka and is bottled at 44% ABV.
The botanicals are steeped and distilled in neutral wheat spirit completely separate from each other. There is nothing binding the flavours together so it’s very playful. These separately distilled botanicals are then blended together, but it’s one of the reason there’s such clarity of flavour. A number of botanicals have their moment to shine.
When you first try a sip of Pink Pepper Gin, it’s the fresher, spicy notes of pink peppercorns, juniper and cardamom that are prominent. However, when diluted or served chilled over ice, the spirit evolves and the patisserie notes of vanilla, tonka and honey come to the forefront.
Now we have enjoyed numerous times as a G & T so we thought it was high time we created a cocktail......
Taking inspiration from the classic Clover Club cocktail we used fresh ripe strawberries instead, the result being an utterly delicious serve with divine vanilla notes on the finish giving a creamy, dessert like feel.Ingredients:50ml Pink Pepper Gin
1 tablespoon Belsazar Rose Vermouth
Handful of fresh strawberries
15ml of fresh lemon juice
15ml or sugar syrup
1 egg whiteMethod:Muddle the strawberries in a cocktail mixing tumbler, and the rest of the ingredients, then add ice.
Shake vigorously for 15 seconds, the REMOVE the ice (reverse dry shake!)
Shake for a further 15 seconds then taste...check the balance of sweetness works!

A Taste of South Africa...We’ve been big fans A Taste of South Africa...We’ve been big fans of Inverroche ever since discovering the range on our visit to South Africa a couple of years ago.Inverroche founded by Mother and Son duo Lorna and Rohan Scott, began experimenting with a 1.7-litre copper pot still back in 2007. Today, they are one of South Africa’s leading distilleries and export globally.Tonight’s feature, Inverroche Amber, is infused with fynbos from the coastal region and dunes of the Cape Floral Kingdom. Launching in December 2018, @glaswegin is a contem Launching in December 2018, @glaswegin is a contemporary new gin that celebrates the City of Glasgow.
What makes this gin different? Well there is no backstory about a long lost aunt that used to make gin, or an epic journey to find a secret botanical, or even a photo of the Founder on the website…. Instead there’s a cleverly executed bottle, a touch of Glasgow humour, and one hell of a liquid. In a time where everyone is looking for charming back story or at the very least a face to a brand, it’s a brave move….
The gin is made using 8 botanicals including Italian juniper, milk thistle, Russian coriander, angelica, orange flower, chamomile flower, pink peppercorns and bay leaf.
On the nose this is juniper forward with citrus notes and a hint of flora. To taste it starts with a bold juniper hit, but gives way to a fruitiness with green and spice notes providing support. Whilst to finish it’s smooth, bright and easy drinking leaving a light and floral after taste combined with dry juniper. As a G&T we paired with red apple and mint and a Indian Tonic.
On paper the botanicals sound like an eclectic mix, but much like Glasgow with its rich history of invention and innovation, this gin charts its own course. It’s upfront, no frills, yet distinctive and totally representative of its name. This is a classic juniper forward gin, that is incredibly smooth on the palate and makes for very easy drinking.

BLOOD ORANGE & APRICOT GIN...There was huge exci BLOOD ORANGE & APRICOT GIN...There was huge excitement amongst The Gin To My Tonic team when Nick from Three Wrens got in touch to share his latest creation, fondly nicknamed “Bloody Apricot”.After 20 years in the drinks & spirits industry, Master Distiller and Founder Nick took the plunge and began to carve out his own gin journey with the launch of Three Wrens. The distillery itself is located in rural Cheshire in stunning surroundings. They have the pick of the land in terms of edible shrubs, flowers and roots for use in their gins, and also grow their own herbs. It’s the perfect setting to create award winning gins.We personally love the innovation from Nick at Three Wrens as he continues to push the boundaries on what we know about Gin with creations including Apple Crumble, Bison Grass, to this newly released apricot inspired creation. This evening it is all about Callooh Callay Coastal Gin.....Gyre & Gimble is best known as a bar and of the newest additions to Norwich’s ever growing Cocktail Bar scene, with a unique, fantastical vibe broken up with splashes of greenery, it’s definitely one of a kind.Boasting one of the largest range of spirits in Norwich it wasn’t long before they looked to create their own range of gins.Callooh Callay is a homage to the Norfolk coast. A beautiful blend of 10 ethically sourced botanicals that together create a herbaceous spirit with waves of fragrant lavender, rock samphire, sea air and in their own words, two tea spoons of wishful thinking!
On the nose it’s floral with hints of fresh sea air from foraged Rock Samphire and Lavender.
Herbaceous notes from sage leaves develop into floral lavender and salty sea air.
To finish a long, aromatic and warming pepper spice with lasting delicate notes of floral botanicals.
We recreated their perfect serve with a grapefruit slice, rock samphire and a Fever-Tree Indian Tonic. Holy Island Gin......The Holy Island of Lindisfa Holy Island Gin......The Holy Island of Lindisfarne is famed for its stunning landscape and history that dates back to the 6th century AD. They describe their gin as the heart and soul of Northumbria, it is crafted to deliver the essence of island life in a bottle.
The journey started in 2016 when they purchased their first copper pot still named ‘Rose’ ( The gin is now made on their still named ‘Mona’. It is small batch with 90 bottles produced each time) As with all botanical blends many combinations were tried along with different distilling methods. They finally found the blend that gave true provenance to the isle.
A delicate balance of floral and sweet notes with bold juniper at the fore this is a delicious gin.
There are 11 botanicals in total including nutmeg, elderberries, rose petal and sweet orange peel. They use both traditional methods and vapour infusion to create this stunning blend. It has to be said upon trying this gin we were enthralled.
On the nose it is bold and juniper forward with zesty undetones. To taste, well it is quite frankly delicious. Layers of complex flavour fill the palate and whilst being delightfully ginny, it is citrus forward as well as smooth, the finish is long with a gentle sweetness at the end.  A delight for the tastebuds. A garnish of fresh blood orange and Fever-Tree Indian tonic water make for a delicious serve.
One of the pleasures of gin is the never ending journey of discovery and having the opportunity to try some superb creations from all of the world. Pulp of half a Passionfruit
Passionfruit purée- 1 teaspoon (can buy this online)
Juice of Half a lime
Teaspoon of sugar syrup
Prosecco, Cava or ChampagneMethod:Add all ingredients EXCEPT the fizz to a mixer tumbler or glass. Mix into a pulp.
Double strain into a champagne flute so that no seeds end up in the glass. Top up with bubbles and garnish with an orange peel twirl!

We return this evening to the ever popular Sixtown We return this evening to the ever popular Sixtowns Gin...The story begins in the city of Rezekne, Latvia where the founding brothers Great-Great-Grandparents began distilling vodka from grain. As young boys, the brothers Vitalijs and Alex, enjoyed watching their grandparents whilst learning the secret family recipes passed down from generations.
In 1998 Vitalijs and Alex moved to Stoke-on-Trent. Proud to have grown up in the heart of the country the brothers were inspired by the city and its rich cultural heritage. Made up of six neighbouring towns and renowned as the World Capital of Ceramics, it’s considered one of the few cities worldwide to still be a world leader in their craft today. This inspiration comes through clearly in the final product...
The gin itself is full of juniper, cardamom and zesty lemon with warming ginger and pink peppercorns developing towards the finish. The complete list of botanicals will never go further than their trusted team, it’s a secret family recipe after all, but it’s fair to say that this has all the hallmarks of a solid juniper forward gin.
