The Gin To My Tonic
Introducing Ahascragh Distillery's Xin Gin Xin Gi Introducing Ahascragh Distillery's Xin Gin

Xin Gin is a juniper-led dry gin with fresh citrus notes of orange zest and lemongrass combined with the exotic taste of the Asian fruit, persimmon, held by an earthy, herbaceous undertone of dill and cinnamon spice.

The unique bottle design, featuring ancient Celtic swirls and a cross-shaped label, symbolizes the founders’ commitment to honouring and staying connected to both of the cultures they hold dear; Ireland & Asia.

Xin’s founders Michelle and Gareth McAllister have Irish blood and Asian hearts. After spending many years in Asia, they wanted to merge what they loved about their two homes. The word itself means ‘heart’ or ‘feelings’ in Mandarin.

The design of the bottle, with ancient celtic swirls contrasted with a modern eastern aesthetic reflects the liquid inside – a perfect balance of European and Oriental botanicals. The cross shaped label represents a promise to stay connected and a crossing point of the two cultures they love.

It’s a fusion of culture but also flavours, and superbly done at that. There are some gins that just make waves as soon as they launch, and this is defiantly one of those, holding authenticity and soul at its core.

The best type of Roses are the ones that come in G The best type of Roses are the ones that come in Gin… Say hello to Silent Pool Rose 🌹

In 2014, founders Ian McCulloch and James Shelbourne met in their local pub (where else?) and discussed the idea of setting up a small, local distillery. Taking their inspiration from Scottish whisky distilleries, the two friends started out with a grand vision of making a truly sustainable distillery next to a fresh water source, producing handcrafted, artisan spirits using locally sourced ingredients. The end result is a distillery that has become a household name, known not only for their unique and stunning bottle, but also the delicious liquid.

Silent Pool Rose is distilled with a unique rose tea infusion to create a distinctive yet delicate rose flavour. This award winning Rose Expression Gin shares the Silent Pool Gin DNA in terms of its complexity and refreshingly individual character, however the core recipe has been refined to compliment and enhance the rose notes. Some of the original botanicals – pear, bergamot, cubeb and cardamom – have been increased while lemon becomes the leading citrus.

The bottle carries a pink copper ribbon to denote the rose flavour. It is a delicate blend. Light, elegant and smooth with notes of vetiver and cardamom mingling beautifully on the palate. Delicate rose notes build in the back of the mouth, along with a lingering finish of citrus and spice.

We recreated their perfect serve using Fever-Tree Elderflower Tonic Water and Pear (a garnish not used often enough in our opinion!)..

⭐️ NEW BOTTLE ALERT ⭐️ Barra Atlantic Gi ⭐️ NEW BOTTLE ALERT ⭐️

Barra Atlantic Gin has a brand new look encapsulating it’s maritime treasure status and their environmental responsibilities to the Isle of Barra

Husband and Wife Team Katie and Michael Morrison had long held aspirations of distilling their own gin, and low and behold they’ve achieved their goal and then some by creating a modern fresh and utterly intriguing gin that’s a love letter to the Isle they call home.

Created with 17 carefully selected botanicals, juniper is balanced with a standout botanical Caragreen seaweed, delivering a distinct yet charming array of floral and herbs notes. It’s dry, rich with just a touch of sweetness and saltiness, with a hint of spice lingering on the finish. The flavours can only be described as a dance on the palate and are truly representative of the surrounding landscape - a gin perfect for those that enjoy a coastal charm to their gins.

As a perfect serve we would recommend an Indian Tonic and a garnish of grapefruit and rosemary. Delicious!

A Dog Lovers Gin… 🐶 Long Dog Gin is inspire A Dog Lovers Gin… 🐶

Long Dog Gin is inspired by the owners love and passion for their Miniature Dachshunds `Max` and `Paddy`.

Taking the boy’s red colour combined with their strong character and loyal and loving nature, they sought to create a bold yet smooth gin of red citrus flavours that would stand out from the crowd.

On the nose, there’s lots of layered citrus, slight sweetness, touch of spice. On the palate, it’s got a gorgeous soft mouthfeel, despite the heavy citrus layers, they stick to the finish with a classic grapefruit bitterness, whilst up front is lots of light warming spice.

In a G&T, the nose is citrussy, but juniper heavy. The palate gives off lots of citrus, with a big bite of grapefruit bitterness.

Marmalade Gin… 🍊 Copper in the Clouds Marma Marmalade Gin… 🍊

Copper in the Clouds Marmalade Gin is distilled, bottled and hand finished at Dowsetts Farm in Hertfordshire. They make their very own marmalade onsite for this gin, using fresh pink grapefruit, seville orange and blood orange peels. Yummy… 😋

It’s a rich orange in colour, and as you would expect it’s sweet and zesty with a slight bitter note, exactly the way marmalade should be. It’s a celebration of citrus if you will just waiting to be savoured and enjoyed…

We love the chic bottles as well, wrapped in a specially designed print and finished with a coordinated colour wax, it’s got a completely different look and feel to it. Simple yet totally effective, giving us a glimpse into the colourful personalities of the Copper In A Clouds team.

Fancy meeting and sampling with them in person? We are delighted they will be joining us in London, Faringdon (Oxfordshire), Bedford and Bury St Edmunds this year as they make their “Gin To My Tonic” debut.

Procera Gin was founded with a dream to bring the Procera Gin was founded with a dream to bring the very best of Africa to the world.

Distilled proudly in Nairobi, Kenya, it’s the world’s first gin to use Juniperus Procera. What is Juniperus Procera we hear you ask? As you probably gathered from the name it’s a type of juniper berry which gives this gin its unique character, located exclusively on the high altitude sun drenched lands of Kenya & Ethiopia. Procera Gin uses ten botanicals in total including African Juniper, Common Juniper, pink peppercorns, Selim pepper, Pixie oranges, Swahili limes, cardamom and acacia honey.

On the nose theres clear piney juniper streak with underlying citrus and seductive honey. On the palate this theme somewhat continues with rich juniper balanced with delightful citrus and peppery spice. Whilst to finish the spice notes continue uplifted by the citrus and enriched by honey.

And we have to touch base on the bottle which lies in its simplicity: one piece of glass, one piece of wood, and one piece of leather, with no label to hide the artistry only time and passion.
